Dingle Gin Tasting Notes from Whiskey Center
- Nose: The nose is clean and classic, featuring a bright juniper presence that is piney and warm. Freshly cut angelica stems add a clean, floral brightness. It’s very classic, primarily centered around these notes, with mint-laden undertones providing a crisp herbal complexity. It’s one of my favorite noses of 2016 so far.
- Palate: The palate starts with juniper, presenting a crisp floral mid-note with an almost fruity, jammy quality. There are hints of blackberry jam, a touch of marmalade, and chamomile, followed by a sudden, strong minty note that adds a bright freshness and a mentholated coolness throughout the mouth. Flavor-wise, Dingle Gin straddles between eucalyptus and mint, leading to a peppery crispness pre-finale: coriander, cubeb pepper, and a herbal greenness.
- Finish: The finish is of medium length, dominated by mint and herbal notes with a gentle warmth on the back palate. The spirit is crisp, not oily or overly thick, and despite its rather thin body, it delivers a robust flavor profile. Overall, I find it quite enjoyable.
